Garlic Butter Shrimp & Mushroom Bites
INGREDIENTS
1 lb large shrimp, peeled and deveined
8 oz baby bella or cremini mushrooms, halved
2 tablespoons olive oil
3 tablespoons butter
3 cloves garlic, minced
1 tablespoon lemon juice
1 teaspoon smoked paprika
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Optional: cooked brown rice or whole grain crackers for serving
DIRECTIONS:
Prep: Pat shrimp dry and season with paprika, salt, and pepper.
Sauté mushrooms: In a large skillet, heat olive oil over medium heat. Add mushrooms and cook for 4–5 minutes until tender and lightly browned. Remove and set aside.
Cook shrimp: In the same skillet, melt butter. Add garlic and sauté for 30 seconds, then add shrimp. Cook 2–3 minutes per side until pink and cooked through.
Combine: Return mushrooms to the pan, drizzle with lemon juice, and toss to coat in the garlic butter sauce.
Serve: Garnish with fresh parsley and serve warm over brown rice or with whole grain crackers for a wholesome bite.
